Quick and Easy Homeschool Lunches

When you homeschool, it’s not only the curriculum rut you have to avoid, but often (probably more often!) it’s the lunch rut. Here are four of my family’s favorite quick and easy lunches.

Macaroni and Bacon Casserole

1 box of macaroni and cheese, prepared by package directions
7-8 slices bacon, cooked and crumbled
1 can diced tomatoes
1/3 c sour cream
1 c cheddar cheese

Mix all ingredients together, reserving some cheddar cheese to sprinkle on the top. Top with cheese and bake at 350 for 30 minutes.

Chicken Roll-ups

1 can cooked chicken
1 can cream of chicken soup

1/2 c sour cream (I never really measure this)
1 c cheddar cheese (or this)
2 cans crescent rolls

Mix together soup, sour cream and cheese. Add to chicken, reserving some for topping. Place a spoonful of the chicken mixture on each crescent roll, roll up and place in a greased casserole dish. Top with remaining soup/sour cream/cheese mixture. Bake at 350 degrees until crescent rolls are browned.

(**Note: The last time I made these I skipped the rolling up step. I spread one can of crescent rolls on the bottom of a glass dish that I’d sprayed with cooking spray. Then, I spread the filling layer on the rolls and placed the other can of crescent rolls on top. I spread the remaing soup mixture on top and baked as normal. They were just as good and much quicker and easier.)


Pizza Rolls

1 jar of pizza sauce (about 2 cups, if you make your own)
2 refrigerated pizza crusts (or, you know, you could be industrious — and probably a bit healthier — and make your own)
2 cups of mozzarella cheese
1 cup or so of cheddar cheese (optional)
1 Tablespoon or so of melted butter and a little garlic salt and oregano to sprinkle on top

Spread each pizza crust into a large pan. Top half the crust with sauce and cheeses. Fold over. Brush with melted butter and sprinkle garlic salt and oregano on top. Bake according to package directions.

Ham Roll-Ups

Large tortilla shells
Sandwich ham
Cheddar cheese
Butter, melted

Top each tortilla shell (my kids eat one or two each) with two slices of ham and 1/4 cup or so of cheddar cheese. Roll up and place seam side down on a greased baking sheet. Brush with melted butter. Bake until cheese is melted. (I also broil for a minute or two to make them crispy.)
